Salsa goes with everything. Except maybe ice cream. Or pancakes. Or jello. But I digress...come on folks - get creative and tell me how you like to incorporate Kat's California Salsa into your recipes! I will use your name, I promise!
Here's my very first recipe submitted by one of my favorite people Joe Minarik - although my sister Michele in California claims her recipe is very similar.... lol
Ingredients:
1 quart Kat's California Salsa.
1 Liter of Tequila
1. Eat Salsa with Spoon.
2. Drink Tequila.
3. Repeat until one or the other is gone. Then buy more and repeat.
Especially good after a day of dealing with corporate idjits.
Californiasalsapasta (by ME!)
1 pint Kat’s California Salsa
Olive Oil
1 big bag of fresh spinach, washed and dried
3 cloves chopped garlic
Shredded Parmesan Cheese
A really yummy, chewy loaf of sourdough bread
Fresh Linguini (or any pasta you like)
Start a big pot of boiling water and preheat the oven at 375
Heat skillet and coat with olive oil. Sautee the garlic for 3 minutes. Add in fresh spinach, cover, and reduce to low and simmer until wilted. Stir to coat the spinach, drain the salsa a little bit and throw it in the mixture - let it simmer for ½ hour, stirring occasionally.
When there is about 10 minutes left for the spinach/pasta concoction, brush the bread with olive oil and put in the oven, then cook the pasta.
When the pasta is al dente, drain, put into a big old bowl, pour the spinach/salsa over the noodles, toss lightly (sometimes I add a little more olive oil depending) then douse with the parm and toss again.
Get the bread out and slice in hearty chunks.
Serve to your very hungry family with a nice salad. Make the kids eat their veggies! This dish goes nicely with a nice chilled Shiraz or whatever you dig.

My Favorite Kat's Salsa Quickie: One Can/Pouch of Tuna. One Nice Ripe Mashed Avocado. Mix Well. Add Kat's Salsa to Taste (with minimal liquid). Fab on a Toasted Pita. DELISH! Just had one.
Rockin' Bean Salad
1 can of Black Beans drained
1 Can Kidney Beans or Canneloni Beans drained
1 Can Yellow or White Shoe Peg Corn
1 pint of Kat's Salsa
Mix Together
Best when chilled for at least i Hour.
